Small amounts of characterful dry, old, vintage-dated Amontillados and extremely old, vintage-dated sweet Pedro Ximénez are consistently released by Toro Albalá from the Montilla-Moriles appellation in eastern Spain. With the best and oldest vineyard holdings in Montilla, Toro Albalá is one of the premier producers of Pedro Ximenez today. As the first Montilla producer to bottle dessert-style Pedro Ximénez (in 1970), Toro Albalá is still the only expert in 100% vintage Pedro Ximénez.
A sweet and velvety wine, elaborated with Pedro Ximénez grapes harvested in mid-August and laid under the sun for around seven days to concentrate all their sugars. After the press, a sweet must was obtained and left to rest in stainless steel tanks for over a year. A natural gem full of sensations that seduces whoever enjoys it.

TASTING NOTES:
Aroma: Medium intensity in which aromas of raisins, figs and honey take the leading role, together with a liquor background and memories of caramel and vegetable freshness from grape stalks.
Taste: Sweet, silky, mild acidity and bitter vegetable ending which balances the sweetness and fills it up with sensations.
SERVING SUGGESTIONS
It’s an excellent wine to enjoy on its own or with desserts, blue cheeses, dried fruits and pastry.
